One of my biggest Thanksgiving dinner challenges is finding something to do with all of the leftovers. A good turkey salad is versatile, keeps well, and can be served for lunch, snack, or dinner. This salad's got a twist -- a curried mayonnaise base. | TraditionalCookingSchool.com

What to do with Thanksgiving leftovers?

That's one of my biggest challenges every year!

Of course, turkey soup and turkey sandwiches are expected… Yet I also enjoy a good turkey salad. Not only is it versatile, but it keeps well and can be pulled out for lunch, a snack, or dinner!

This Curried Turkey Salad utilizes homemade curried mayonnaise for a fun twist. If the raisins and apples are a bit of a stretch for you, don't worry, they were for my husband too. 😉 However, when I served this for lunch, he was so delighted that we didn't have much leftover at all!

Course Lunch, Main, Salad
Author Jenny Cazzola

Ingredients

  • 4 cups turkey cooked, chopped
  • 1/2 cup raisins
  • 1/2 cup apple chopped, any variety
  • 1 cup mayonnaise homemade
  • 2 tablespoons curry powder
  • 2 tablespoons sour cream
  • sea salt to taste
  • pepper to taste
  • crispy almonds chopped, for garnish

Instructions

  1. In a large glass mixing bowl, add turkey, raisins, and apple.

  2. Toss to combine. In a separate bowl, combine the mayonnaise, curry powder, and sour cream.

  3. Pour over turkey mixture and stir well.

  4. Adjust seasoning to taste.

  5. Serve with crispy almonds sprinkled on the top.

  6. Keep refrigerated.

Recipe Notes

For a complete meal, serve over a bed of greens with homemade bread or crackers on the side.

Variation:

Instead of, or in addition to, raisins and apples try: shredded coconut, dried cranberries, or even a spoonful of chutney on the side.

Happy Thanksgiving to you and your family! How will you use your turkey leftovers?

About Jenny Cazzola

Tired of the stress of city life and motivated by a desire to be more self-sufficient, Jenny and her husband decided to trade life in the busy suburbs for life on a quiet country homestead. In the fall of 2012, they moved to an acreage in rural Northeastern Oklahoma where they are learning to live off the land and working to establish a small home grown heirloom produce business. On her blog Black Fox Homestead, Jenny writes about their transition from city to country life, offers tips on natural gardening, recipes from her kitchen, and ideas for frugal, simple living. She and her husband currently share their homestead with four shih-tzus and eight growing Rhode Island Red chicks; but she hopes to see ducks, dairy goats, and possibly a cow in her future.

I love curry turkey/chicken salad! I used to think that I hated all chicken salads. Once I started making my own mayo and added curry I realized how good it could taste! 🙂 I like the idea of adding crispy almonds.

Katie chicken (or turkey) salad is one of my all time favorites. I classify it as comfort food. 🙂 I like it curried, or just about any other way. And yes, homemade mayonnaise makes all the difference in the world.
