2 sweet potatoes, grated (not yams)
1 cup unsweetened medium shredded coconut OR 2 cups unsweetened large flake coconut
1 cup dried fruit of your choice, or a combination (raisins, chopped dates, chopped dried pears, cranberries, etc.)

makes 2 dozen muffins

1/4 cup flax seed meal
3/4 cup filtered water
3 cups pureed sweet potatoes*
1/2 cup grapeseed oil
3/4 cup raw agave syrup (or honey)
1 teaspoon vanilla
1 teaspoon cinnamon
1 teaspoon dried ginger
1 teaspoon allspice

Sweet Potato Muffins

Something about it being Fall gave me a desire to try a new sort of muffin. These muffins fluff up beautifully. The taste is satisfying and heartening.
