Fasooli (White Beans and Rice)

Fasooli (White Beans and Rice)

By Wardeh on April 22, 2008

This is one of my favorite growing up dishes. The flavor is excellent; it is warming and filling. I still don’t think I make it as well as my Mom does, but I try! The photo above is of the Great Northern beans I quick-soaked this morning (see How to Cook Dry Beans). The [...]

Chicken Ginger Soup

By Wardeh on January 25, 2008

Yesterday, I boiled a chicken with ginger in the water to make a delicious ginger chicken stock. After the chicken was cooked, I took it out and added brown basmati rice to the water. Then when that was done, I took the meat from the chicken and added it back in. During the day, I [...]

Minty Beef & Lentil Stew

By Wardeh on February 24, 2007

This stew is reminiscent of my Arabic Meatballs. I added lentils to round out the meal along with a minty-tomato liquid base. It is scrumptious when served over Arabic Rice.

1 to 2 pounds grass-fed ground beef
1 onion, diced
8 cups filtered water or stock
1 28-ounce can diced tomatoes
4 cups cooked lentils
3 tablespoons dried parsley
1 tablespoon dried [...]

Ginger Chicken, Rice & Lentil Soup
This soup is heart-warming, healthy and delicious. Serve it on after a day spent outside in cool winter or fall weather. It makes a large quantity — great for company or for wonderfully nourishing leftovers.
Even though the soup will be cooking in part all day long, it is still [...]

Beef Stew with Garden Tomatoes & Brown Jasmine Rice

By Wardeh on September 19, 2006

The tomatoes and herbs add wonderful flavor to this stew. Feel free to add other chopped vegetables, such as potatoes, carrots or celery during the last 1/2 hour of simmering.

2 pounds beef stew meat or sirloin tip steak, cubed (preferably grass-fed)
1 onion, diced
2 tablespoon extra virgin olive oil
filtered water
4 to 6 ripe garden tomatoes (or [...]

Middle Eastern Lamb Ragout

By Wardeh on January 19, 2006

My friend shared this recipe with me last weekend after we ate it at her house. She made it with venison and it was delicious! The recipe calls for lamb, which I don’t have, so I am using grass-fed beef stew meat. The sauce is fantastic over brown rice.
I have assembled it in the crockpot [...]
