Bake Bread (and More) in Your Toaster Oven

By Wardeh on February 13, 2009

Here’s another tip from my friend Christina (who shared her fool-proof method for warming milk a few weeks ago).
We love having fresh baked dinner bread every night at dinner. If I don’t want to heat the house with the big oven I just bake it in my toaster oven. I make a small loaf usually [...]

Coconut Oil As Butter

Coconut Oil As Butter

By Wardeh on November 20, 2008

Lately, we’ve taken to using unrefined, virgin coconut oil anytime we need a buttery spread. Jeff said, “This is what butter should taste like!” It’s really good, surprisingly good. Give it a try.

GF Spice Muffins

GF Spice Muffins

By Wardeh on August 26, 2008

Naomi was my helper today to make (okay, create) these muffins. We all were in the mood for muffins, but I didn’t have any pureed vegetables, apple sauce, pear sauce, or bananas. I usually like to include one of those for moisture and flavor. So we rustled up some coconut milk instead. The batch turned [...]

Ginger Pear Muffins

By Wardeh on April 8, 2008

Up until last week, we were still able to purchase local, organic Asian pears for one dollar per pound. But last year’s crop is at its end because the pears, while firm and tasty, are brown on the inside. Since we still had about 10 pounds left, I cleaned, cored and pureed the remaining pears. [...]

Apple-Sweet Potato-Pumpkin Muffins: Date Sweetened, Gluten-Free, Egg-Free, Dairy-Free

By Wardeh on January 25, 2008

I’ve been playing around with my agave-sweetened muffins for awhile now to make them fruit-sweetened. We are using less and less agave these days and turning toward fruit for sweetening. These muffins are sweetened with date sugar and applesauce. This makes a BIG batch — can easily be halved. I like to make it big [...]

Banana-Carob Muffins — Gluten-Free

By Wardeh on November 9, 2007

Haniya, in a sweet and unassuming way, has been asking and asking and asking me to redo the Banana-Carob Muffins into a gluten-free snack, so we did that this morning. She helped me.

1/4 cup flax seed meal
1/4 cup filtered water
1/2 cup raw carob powder

By Wardeh on November 6, 2007

Today we’ll be making Pumpkin Muffins for the Baking Week at the T2CHK Message Board. This is a variation of the Sweet Potato Muffins, using pumpkin puree for the sweet potato puree. (Also see the gluten-free variation.)
Here are a couple of things to keep in mind:
*If you would like to use eggs, use about 2 [...]

Sweet Potato Muffins

By Wardeh on November 14, 2006

Something about it being Fall gave me a desire to try a new sort of muffin. These muffins fluff up beautifully. The taste is satisfying and heartening. They are soft and perfectly sweet (but not too sweet). Give them a try! They would be excellent made ahead for an easy Thanksgiving morning breakfast or snack.

Pumpkin Muffins

By Wardeh on October 29, 2006

A co-worker of my husband’s shared this recipe with us. I made them this morning, thinking we might be having company for dinner this evening. We aren’t having company after all, but at least we have some yummy muffins around to pacify us.
