Instead of tuna, we eat wild salmon. Because wild salmon is lower on the food chain and smaller than tuna, its mercury levels are much lower. Wild caught salmon, as far as we know, are safe to eat in terms of mercury.
Jeff’s mom and dad just went on a cruise to Alaska and brought us back [...]

Undoubtedly, my favorite grain is quinoa. We use it in place of rice, for variety. I think it is beautiful. The pearls turn translucent when cooked and the pretty little spiral threads that curl off the grains are enchanting. This summer, I’ve discovered cold grain salads — and quinoa makes delicious cold salads. This is a very [...]

We are loving our gluten-free flatbreads! They work wonderfully for all sorts of sandwiches. They are best toasted and then topped. We have eaten them with hamburgers, wild salmon salad, chicken salad, pinto bean spread and veggies. For an open-faced sandwich, I will toast and top them, sprinkle shredded goat cheese on top, and then [...]

This is a very delicious spread to smooth on toasted Four Grain Flatbreads (gluten-free), top with cheese and put under the broiler so the cheese can melt and crisp up.
I’ve noticed that differing spice companies offer spices of varying potencies. The best flavor will come from quality dried spices. So please adjust these spices to taste.

The flatbreads we’ve been making are extremely easy to do and the recipe is very forgiving. We take about 3 to 3-1/2 cups of gluten-free flour*, 1/2 cup of flax seed meal, 3/4 teaspoon salt, 2 tablespoons oil and 1 teaspoon baking powder (optional) and then add enough water to make a stiff but workable [...]

Here’s how I made the hamburger buns on which we feasted Friday and Saturday nights.
After the first rise (in addition to the sponge), I took 3-inch diameter balls of cracked grain cereal bread dough and flattened each with my hands as much as possible (they ended up to be about 4 inches wide each). I was [...]

Our hamburgers Friday night were delicious. I added finely diced onions, parsley, salt & pepper to the raw burger. Out of 2 pounds of 100% grass-fed local beef, I shaped 6 (1/3 pound each) patties. I baked them at 375 degrees for about a half hour on a broiler pan in the oven. We like [...]
