Powdering Rapadura Methods Compared
Since I had an issue with Rapadura not dissolving in my first attempt to make homemade chocolate chips, I took the advice of my friend Jami. She advised powdering the Rapadura (evaporated cane juice) in a countertop appliance. The Vita-Mix far and away produced the best powdered Rapadura.

1/3 cup plus 1 teaspoon coconut oil
2/3 cup raw agave syrup
1 teaspoon vanilla extract
1/2 teaspoon almond [...]
Homemade Chocolate Chunks — Sugar-Free, Dairy-Free, Gluten-Free
We long ago gave up chocolate chips because of the dairy in them. Then we gave up the dairy-free chocolate chips because of the sugar in them. Chocolate Almond Joy Ice Cream
The coconut milk makes for a creamy ice cream, which is hard to come by in non-dairy frozen desserts. It also adds a delicious coconut flavor. Other non-dairy milks can be substituted, but the ice cream will be less creamy, more icy, and harder when placed in the freezer.

The coconut milk makes a creamy non-dairy ice cream, which is hard to come by in non-dairy frozen desserts. It also adds a delicious coconut flavor.
