Haniya, in a sweet and unassuming way, has been asking and asking and asking me to redo the Banana-Carob Muffins into a gluten-free snack, so we did that this morning. She helped me.
Banana-Carob Muffins, gluten-free

These are a hit around our house lately! They are slightly frozen, which will make them a great treat come summer. They also happen to be very good for you. I’ve doubled the amount of tahini from the original recipe so we get more calcium in every bite.

I made changes to my pancakes this weekend to make them lighter and fluffier. Here's the revised recipe.
