This is one of my not-very-precise recipes, and it also happens to be very forgiving. I created it along the same lines as many of my hard-to-duplicate-exactly skillet dishes. It was delicious last night and I’m looking forward to having more for lunch today.

Spicy & Creamy Beef over Brown Jasmine Rice

The Rice:

2 cups brown jasmine rice, dry
4 cups filtered water
1 tablespoon extra virgin olive oil
1 teaspoon dried parsley
1/2 teaspoon sea salt

Combine all ingredients in a 3 or 4 quart stockpot. Bring to a boil. Cover and reduce heat to low. Allow to cook, undisturbed (don’t lift that lid!) for one hour.

Beef Stew with Garden Tomatoes & Brown Jasmine Rice

The tomatoes and herbs add wonderful flavor to this stew. Feel free to add other chopped vegetables, such as potatoes, carrots or celery during the last 1/2 hour of simmering.

Spanish Rice

2 cups brown basmati or jasmine rice
3 tablespoons extra virgin olive oil
2 teaspoons onion powder
1 teaspoon thyme
1 teaspoon oregano
2 teaspoons sea salt
1/4 teaspoon black pepper
6 tablespoons tomato paste plus enough water to make 4-1/4 cups

Loubieh — Arabic Green Bean Stew
