Four Grain Flatbread
gluten-free, dairy-free, egg-free
These are flatbreads similar to the Quinoa Dinner Cakes with Sweet Potato, only these don’t require sweet potato puree and they call for an additional flour — corn flour. We eat them as bread along with main dishes such as chicken, chicken salad, hummus, or wild salmon salad.
Our favorite way to eat them [...]
Tiffany’s Gluten Free Bread
I made Tiffany’s Gluten Free Bread on Friday. It is the best gluten-free bread we’ve had. It was lighter, fluffier and better tasting than any others. We love the corn flavor and the texture was soft and chewy. I’d recommend that you check it out!
The recipe calls for 2 eggs. Since we can’t do those [...]
Whole Spelt Bread — 3 Large Loaves
This recipe yields 3 large loaves of whole spelt bread. See also my recipe which yields 2 large loaves.
Spelt can’t be kneaded as long as wheat, because the gluten it contains is more fragile. It doesn’t feel the same as wheat — it feels gloppier and stickier, but should still be warm and smooth.
Whole Spelt [...]
Corn Tortillas (Gluten Free, Batter Style)
I promised the recipe for these corn tortillas a long time ago… sorry it took me so long! They are courtesy of a good friend on the T2CHK message board.
These tortillas are as easy as 1-2-3 because they are batter style. Mix up the batter, pour 1/4 cup at a time into a skillet, cook [...]
Basic Whole Spelt Bread — 2 Large Loaves
Haniya won’t be able to eat the Whole Spelt Bread I made this morning, but the rest of us will. I can hardly believe how beautifully it turned out. I have missed many things about bread — the making of it, the smell of yeast baking, the chewy texture, the golden brown crust, that perfect [...]
Quinoa Dinner Cake Sandwich
Our terrific and yummy dinner last night:
Warm Quinoa Dinner Cakes filled with Wild Salmon Salad,
topped with shredded raw goat cheddar cheese and sliced avocado.
Quinoa Dinner Cakes with Sweet Potato — Gluten-Free, Dairy-Free, Egg-Free
These are dinner cakes, meant to be eaten as “bread” along with main dishes such as chicken, chicken salad, hummus, or wild salmon salad. Treat one of these similar to a Middle Eastern pocket bread (without the pocket) that is held in one hand, alternately taking bites of it and the other foods on one’s [...]

Whole Wheat Bagels
Here’s a great recipe to create bagel-shop tasting bagels at home. I tried it out last Thursday and Friday. The bagels are awesome! If you give it a try, you’ll need to get some barley malt, an alternative sweetener. It is available at a health food store or in the health food section of a [...]
Whole Grain Hamburger Buns
Here’s how I made the hamburger buns on which we feasted Friday and Saturday nights.
After the first rise (in addition to the sponge), I took 3-inch diameter balls of cracked grain cereal bread dough and flattened each with my hands as much as possible (they ended up to be about 4 inches wide each). I [...]
