Creamy Beef and Tomatoes with Olives

By Wardeh on January 14, 2008

Creamy Beef and Tomatoes with Olives

When I make this, I also cook a pot of brown jasmine (or brown basmati) rice* along with a pot of lentils*. For serving, I put a scoop of rice, then a scoop of lentils in the bowl and I top that with this delicious beef & sauce. Some [...]

Creamy Beef & Beans with Rice

By Wardeh on December 18, 2007

Creamy Beef & Beans with Rice
The sauce in this dish is one of my favorite flavor combinations — coconut milk, cumin and nutritional yeast. Use any type of beans you like.

1 or 2 pounds beef stew meat
1 onion, diced
3 tablespoons grapeseed oil
4 cups filtered water
1 can coconut milk (unsweetened, lite or regular)
2 teaspoons sea salt
1/2 [...]

BBQ Short Ribs

By Wardeh on August 14, 2007

The best part of this recipe is the sauce. Keep the extra to use for cooking or marinating other meats.

5 grass-fed beef short ribs, cut into 1-1/2″ thick pieces

1 can tomato paste
3 cups filtered water
1/4 cup nutritional yeast (optional)
1 teaspoon onion powder
2 teaspoons sea salt
1/2 teaspoon pepper
1 tablespoon dried parsley
1 tablespoon paprika
1 tablespoon cumin
1/2 cup [...]

Minty Beef & Lentil Stew

By Wardeh on February 24, 2007

This stew is reminiscent of my Arabic Meatballs. I added lentils to round out the meal along with a minty-tomato liquid base. It is scrumptious when served over Arabic Rice.

1 to 2 pounds grass-fed ground beef
1 onion, diced
8 cups filtered water or stock
1 28-ounce can diced tomatoes
4 cups cooked lentils
3 tablespoons dried parsley
1 tablespoon dried [...]

Beef Roast with Tomatoes, White Beans and Brown Rice

By Wardeh on September 29, 2006

I called last night’s skillet dish Beef Roast with Tomatoes, White Beans and Brown Rice.
I put a grass-fed beef chuck roast in the crockpot yesterday morning, covered in water and salted and peppered. I could have added sliced onion, but didn’t take the time.
I also had another crockpot cooking up the white beans.
Then when I [...]

Spicy & Creamy Beef over Brown Jasmine Rice

By Wardeh on September 19, 2006

The Rice:

2 cups brown jasmine rice, dry
4 cups filtered water
1 tablespoon extra virgin olive oil
1 teaspoon dried parsley
1/2 teaspoon sea salt

Combine all ingredients in a 3 or 4 quart stockpot. Bring to a boil. Cover and reduce heat to low. Allow to cook, undisturbed (don’t lift that lid!) for one hour.

Beef Stew with Garden Tomatoes & Brown Jasmine Rice

By Wardeh on September 19, 2006

The tomatoes and herbs add wonderful flavor to this stew. Feel free to add other chopped vegetables, such as potatoes, carrots or celery during the last 1/2 hour of simmering.

2 pounds beef stew meat or sirloin tip steak, cubed (preferably grass-fed)
1 onion, diced
2 tablespoon extra virgin olive oil
filtered water
4 to 6 ripe garden tomatoes (or [...]

Sloppy Joe's in a Bowl

Sloppy Joe’s in a Bowl

By Wardeh on April 24, 2006

This is a family favorite! For company, I stretch the meat by adding 4 cups of cooked green lentils to the meat mixture, while (just about if not entirely) doubling the sauce ingredients.

Company Chili

By Wardeh on February 21, 2006

I served this chili to our friends who came over on Sunday after church. I call it Company Chili because this is a really big batch, but it can easily be halved. I like to add rice to our chili to make it a one-dish meal. If you want to add garlic, go ahead and [...]
