Featuring stewing hens, this pauper’s chicken stew both is economical and healthy – and delicious! Knowing that I’m a sucker for a local meat, the local farm from whom we buy natural chickens gives me a call when they’re processing older – but of course, healthy – birds. As long as I stew these birds long and low, they turn out tender and delicious. Really, a good deal, no matter how you look at it! So, if you think you can’t afford the higher price of local meat, consider asking around for stewing hens.

A happy accident last week. I ordered mung beans from Hummingbird Wholesale in Eugene, OR, but didn’t specify “whole”. I received split mung beans. I didn’t even know split mung beans existed. Well, they do. And they’re delicious. Split mung beans are mung beans that have been stripped of their hull and then cleaned and split. They are small, yellow, and are quick cooking like split yellow or split green peas (though I still soak them to make them fully digestible). After browsing the web and finding inspirational recipes, here’s how I made our delicious Split Mung Bean Soup.

About 4 years ago, I bought 3 to 5 pounds each of about 12 different organic beans and barley, and mixed up my own bean soup mix. We ended up with tons of it – 65 pounds in fact!
