A Big Batch of Cultured Butter

I’m at my friend Shannon’s Nourishing Days blog today, sharing how I make a big batch of cultured butter. How is this different than my cultured butter in the food processor? For one, it is a bigger batch, like 7 to 8 times bigger — instead of yielding 1 pound of butter, I get between 7 and 8. I like this because I can make more butter less often which equals less work. :) I also employ another time saver — culturing the cream while it’s still in the milk.

In the last free video, I showed you how to freeze prunes or plums — this time, I’m showing you how to dehydrate them. They’re easy to do, take up very little storage space and don’t require special temperatures (although cooler is better). The only problem is, they get eaten too quickly! ;)

It is prune and plum season in Oregon — one of my favorite times of year! In today’s video, I show you how easy it is to freeze plums/prunes for use in the winter. In the off-season, I use frozen plums to make plum sauce or we toss the plums in smoothies. The great thing about using frozen fruit for smoothies is it acts like ice, too!

Summer Garden Beef Soup

Our nights are refreshingly cool, yet the garden is still producing. This is perfect weather for warming harvest soups. At least I think so! Make use of your crockpot to cook beef until tender, then combine with flavorful and colorful summer vegetables. I have been serving grain-free almond bread on the side.

Grain-Free Almond Bread

Nutty and moist, this almond bread is both delicious and filling. I serve it like cornbread on the side of a meal. The kids and I need only the bottom half of a square spread with butter, while my husband takes two. Before coming up with this recipe, I tried a recipe I found on the internet. That bread was so dry we all got hiccups! Then I noticed the recipe called for no fat whatsoever. Well, that would explain it. ;) So I played around with the ratios of ingredients and of course I added fat — and here is the final recipe. We really love these!

FREE Video: Green Bean Salad

Green beans are in season! We love this easy and delicious green bean salad, flavored with lemon, garlic and olive oil. In this week’s free video, I make a delicious salad using the heirloom Spanish ‘miralda’ climbing beans, grown and seed-saved (for 20 years) by our friends the Olsons with whom we garden.

Beet Kvass

Nourishing Traditions reports that beet kvass is an “excellent blood tonic, promotes regularity, aids digestion, alkalizes the blood, cleanses the liver and is a good treatment for kidney stones and other ailments.” Good stuff! I am loving it! Each morning, my husband and I have a little shot of it. My children aren’t thrilled. Yet. :)

FREE Video: How To Roast Beets

We picked the last of our beets, for this season anyway. We have more growing for the fall. I don’t remember the variety because they were seeds I bought 6 years ago and never expected to be viable anyway. A nice surprise that they really came in! This variety is striped and the colors range from pale to deep orange/pink. They’re lovely. I love to simply roast beets, which is what I demonstrate in this week’s free video.
