And here’s the third seasonal salad I promised. This salad offers a just a few more seasonal treats, along with cold cooked quinoa. Isn’t it colorful? And it is oh-so-delicious. Adding chicken and cheese — or how about some diced hard-boiled eggs? — turns it into a main dish. A very easy meal, I’d say!

eCourse Results: Skillet Dishes

In the eCourse, I created one lesson to teach how to create skillet dishes. I set up the video camera and tripod and created a meal in front of the camera in less than a half hour. It was fun to do and I hope showed all eCourse members that creative meal making, when one can use what’s in the pantry, is within anyone’s grasp. I loved reading on the eCourse forum what meals were created in the kitchens! Today, I will repost some of the members’ ideas and results so you can get a glimpse of what’s possible, too.

Wild Red Salmon Salad

For tomorrow’s Sandwich Round-Up, I share my simple recipe for wild salmon salad, and I tell you why we like the wild red salmon from Vital Choice. Wild red salmon is an abundant source of Vitamin D and omega-3 fatty acids, including DHA and EPA.

Cumin Chicken Skillet

Using up leftover chicken and combining my two favorite sauce ingredients – coconut milk and cumin – this was a delicious, quick, throw-together meal! I served it over cooked brown basmati rice, but it would have been wonderful over mashed potatoes or quinoa, too.

Basic Jerky – Not So Tough

As promised, here’s the jerky recipe I’m (loosely) following. I looked around for ground meat jerky recipes after I read that commercial jerky is often made with ground meat. We knew that jerky was pretty soft, and we thought it would work better for the people in my family that have teeth issues… sensitive teeth or braces. (I’m sorry, Dr. Price, but we learned about you too late.)

Basic Sprouted Bean Chili

Because the pinto beans in this chili are sprouted prior to cooking, they digest as vegetables. That’s a good thing for people who are watching their carbs. Rest assured, those who normally shun sprouts won’t know the difference. ;) The beans become part of the soup when barely sprouted and they don’t taste any different. This is my general recipe for making sprouted bean chili. This isn’t a spicy chili, so if you use my suggestions, you’ll end up with a mild chili that everyone will like.
