Probiotics: Every Meal — Snacks

It’s time to share probiotic snack ideas! In the past and coming weeks, we’re going to hit every meal and then some. The goal being: to share ideas and recipes for getting probiotics with every bite.

Please share your probiotic snack ideas in the comments. Feel free to add links to blog posts, current or past. Wondering what “Probiotics: Every Meal” is all about? Read this post. Remember to keep the cultured foods uncooked; the friendlies die in the presence of heat.

Here are some of my probiotic snack ideas.

Kefir with a bit of cinnamon and stevia sprinkled on it.

Veggies or homemade tortilla chips dipped in herbed kefir cheese

Iced teeccino (use raw milk or slightly soured raw milk)

Smoothies that include yogurt, kefir, or raw milk. Like this summer fruit smoothie, or a chocolate kefir smoothie.

How about a kefir parfait, which is good any time of day!

Chocolate raw milk — my kids’ favorite!

And not pictured, but equally delicious: sprouted crackers and raw cheese (the crackers don’t offer probiotics), or fruit with coconut cream frosting as dip. Make the dip with raw milk and it is probiotic.

    Love these ideas! Especially the Kefir cheese dip, & Kefir parfait- mmmm, I’ll have to try that:)
    Where’s the Water Kefir? I drink more of that at the moment.

    I’m also thinking a ranch dressing and veggie platter. I’ve been making ranch dressing by using my kefir grains to culture a pint of heavy cream. Then I take half of that pint, add a bit of milk, some mayo, dried parsley, dill, green onion, garlic cloves, salt & pepper, whip that up and serve it with salad. This is the main way I’m getting pro-biotics into my kid. They don’t like my yogurt, don’t like smoothies, don’t like my ketchup, forget eating sauerkraut or anything else lacto-fermented. But they’ll eat this dressing. HAHAHA. :)

    Yogurt with fresh-frozen strawberries. Mmmm.

    Miso soup – stir a tablespoon of miso into a mug of warm (not boiling) water. Good by itself, or with a sprinkling of green onion or chives. Fast, easy, warming, energizing. If you stir a little miso and warm water together into a paste first, then add the rest of the water, it keeps the miso from clumping up and making lumps. I never knew until I looked it up recently that miso is a probiotic food — a traditional, fermented mix of soy and grains — sometimes fermented for as long as 3 years!

    I make apricot butter & apple butter & serve that on my kids’ PBJ sandwiches (on sprouted bread, of course!). We also eat a lot of lacto-fermented salsa on sprouted tortilla chips.

    I second the ranch dressing – my recipe is on my blog – I finally got it down so it tastes like your store-bought ranch dressing, but nutritious! Sometimes I just pull out some green beans or peppers and dip in.

    Anything meaty and savory goes well with sauerkraut, and fermented salsa is yummy on chips or any taco dish.

    Funny you mention the chocolate milk – I’ve been doing the same thing!

    Paula – have you tried this recipe for ketchup? Thinning with tomato sauce seems to be the trick to get the right consistency, and fish sauce is essential. http://thenourishingcook.com/2010/01/how-to-make-homemade-ketchup/

    I’ve been doing a lot of yogurt with a bit of maple syrup as an afternoon snack.

    Also, all my fermented vegetables (ginger carrots, or fermented beets, fermented baby carrots with garlic (total yum)) are good snacks for sitting at my desk when I’ve got the munchies.

I was going to say lacto-fermented salsa (http://www.sustainableeats.com/2010/03/22/guest-post-lacto-fermented-salsa/) which you can also make with peaches right now only they won’t last as long. We have also been making tapenade with our home cured olives: (http://www.sustainableeats.com/2009/10/29/curing-olives/) to serve with homemade feta and pita and bean dip. I also love freezing kefir or raw milk smoothies into popsicles. I even add egg yolk into them to get more nutrients into my little skinny one.

    My ideas:

    Savoury crackers, with tomato, basil, yogurt/cheese and fermented hot sauce.

    Something surprisingly yummy is avocado with some sauerkraut in the center. When I was little I would turn my nose up at it (I think it had something to do with the name “sauerkraut” and that it was one of my dad’s “weird foods”) but now I love it :)
