I’m really tickled to share that today, I’m a guest poster at Kimi Harris’ beautiful blog, The Nourishing Gourmet. Kimi started a series not too long ago – The Healthy $1 Menu – where she offers dishes that cost $1 or less per serving. Since her blog is one of my favorite blogs, I feel both honored and flattered that she asked me to contribute to the series!
I’m sharing my recipe for split mung bean soup. Using all organic ingredients (except turmeric, which mysteriously, I’m not able to get organic through Azure Standard), the cost per serving is well under a dollar!
So go on, check out the recipe for split mung bean soup and the other recipes in Kimi’s nourishing and frugal series!

I am definitely making that soup next week! I have a big bag of moong dal that I used to make another recipe, and I was wondering what to do with the rest of it. It sounds great.
Maybe you can get organic turmeric at Mountain Rose Herbs?

Rebecca, oh, yumm! I’m glad you’re going to try it! I’d love to hear what tweaks you make – you’re a great cook! I will look for the turmeric at MRH – thanks for suggesting it.
Sounds and look so yummy – I’m gonna go add split mung beans to my grocery list! Thanks for sharing

Super cool, Wardeh!
Your recipes are some of the best. You deserve to get your name out there.
Hi Wardeh!
Would the whole mung beans work? I have them on my Azure order already for sprouting.

I think it would Millie – I don’t see why not – the only thing that will get in your way are all those skins, but they would probably come off pretty easily after the soaking. Give it a try!
Wadeh,
What are split mung beans called through Azure Standard? I am having trouble finding them in the search engine.
Kelli – I don’t believe they carry them. I looked a few weeks ago. But Hummingbird does – and we’re about to do our order. I’m getting a bag myself – let me know how many pounds you want and I’ll share.
I’d love enough for one batch, to see if we like it. Thanks!
