		<description>Lacto Fermenting in a Water Bath for Even Temperature

I started lacto-fermenting for the first time this year &amp; didn&#039;t really put two &amp; two together about the seasonality of such an enterprise. (Just a newbie!). So it hit me this fall that I our house gets COLD - not so easy to lacto-ferment. In the winter we keep it at 55 degrees a lot of the time, but certainly no higher than 65. What to do?

My husband is an amatuer photographer &amp; he has a water bath for developing film - that you can keep to an even temperature. So I used it for lacto-fermenting!! And it worked well. I put the mason jars in &amp; kept the temp about 74 degrees. It barely took any power and was safe to leave unattended.  (I could probably fit in 6-8 quart jars at a time).

I imagine I could have tried lacto-fermenting at 65 degrees, but I didn&#039;t think 55 would work.

Next year, hopefully we can figure out some long-term storage so I can do more during the summer (and by then some other items taking time may be reduced - so I&#039;d have more time to spend preserving food).</description>
