Lacto-Fermented Pickles and Salsa – Soaked Spelt/Kamut Tortillas – Sue Gregg’s Blender Pancakes (Tuesday Twister 8/18/09)

This week in my kitchen:

  • Lacto-fermented cucumbers. I got bunches of cucumbers at the Farmer’s Market and at Localvore last week. I wanted to try pickles. I followed the recipe in Wild Fermentation by Sandor Ellix Katz, only I sliced the cucumbers. A taste test yesterday was very, very encouraging.
  • Two kinds of lacto-fermented salsa. First recipe: Heirloom Salsa from Ren @ Edible Aria. Yumm! Second recipe: Salsa in Nourishing Traditions. The cast-iron pan of veggies was headed into the oven for roasting to make Ren’s salsa. And see the messy kitchen afterward? That’s the best kind of kitchen twisting! We tasted both salsas yesterday and today. Both very good! I’d say it was surprising to eat a bubbly salsa, though. No one in the family was expecting that natural carbonation from the lactobacilli. Fun stuff!
  • Soaked Spelt-Kamut Tortillas. I made up the tortilla dough, but added 7 tablespoons of Kombucha and let the balls of dough rest overnight before they became tortillas. Haniya took over for the tortilla cooking and even the taco dinner of which they were a delicious part! You’ll have to read her blog today to hear the rest of that tale. :)
  • Sue Gregg’s blender pancakes. I followed a recipe from Sue Gregg’s Whole Grain Baking cookbook. The pancakes were awesome! I chose brown rice and oats for the grains, keeping to the recipe pretty much as written. However, my acid for soaking was Kombucha. I love using Kombucha for soaking – no sourness. I also made Sue Gregg’s almond coffee cake (twice) but didn’t take a picture.

  1. Wardeh—Everything looks SO good! I can’t wait to try some of these things! I’m really encouraged about the possibility of using kombucha to soak things—especially for Kellen. I can’t use our cultured raw dairy for him, so I’ve been souring rice milk with lemon juice to soak his oatmeal. The result is just too sour for him. He hates it! I haven’t made kombucha yet, although it is on my list of things to try. Do you think I could use the bottled raw kombucha I buy at Whole Foods or from Azure for soaking? Also, I’m working to convert our recipe for Sunday Pancakes to a soaked batter, and I would need to use it there, too. Thanks so much for the fun carnival every week! I can’t wait to see what others have cooking!

    I am sooo borrowing your kombucha idea. I did a soaked tortilla this week and while it turned out good I noticed a little tanginess to it. I’ll try it with the kombucha next time. Thanks!

    Everything looks great! I’m going to try making pickles that way this year, if I get enough cukes, God willing. There’s tons of blooms so I’m hopeful.

  4. I love pickles and would love to make some “real”ones! Everything looks delicious that you prepared, and yes, I agree that messy kitchens are a mark of some yummy twisting going on. I also have tried Sally Fallon Morell’s “bubbly” salsa and it’s very good!

    Kombucha for soaking sounds like a good idea. I used apple cider vinegar for your tortillas a couple of weeks ago, and they are a tad tangy. I’ve been putting raspberries in all my kombucha – maybe I should keep a bottle plain for soaking. ;)

    I copied Ren’s salsa recipe to try sometime. Maybe. DH loves salsa but I’m not sure he’ll go for it if it’s lacto-fermented. I could just not tell him, lol.

    The lacto-fermented pickles are YUMMY, aren’t they? We scarfed all of ours already. I really, really want to try the salsa soon, and I need to try soaking my tortillas next time I make them. Sue Gregg’s Blender Oat Pancakes are our VERY FAVORITES! They’re the only pancakes we make anymore. I’ve never thought to use kombucha for soaking…hmmm….
