My friends and I do a lot of salads and whole grains and soups. The salads are full of nuts and goat cheese or feta with berries and spinach with a healthy oil and vinegar. The whole grains are couscous or quinoa with veggies cooked in. Everyone makes something different. If it's a small gathering, someone will broil some fish. Soups include tomato basil and lentil. We make the bachelors bring the wine and cupcakes.

Meal 7= Mexican Pile On
(When we lived in New Mexico, before moving to Texas, Mexican Pile On was very popular at church gatherings. Great for functions and meetings as everyone is assigned an item to bring. This is my healthy version. The real version also includes an all meat chili, a meat/bean chili, cheese, sour cream, white rice, fried tortillas chips and Fritos. I replace these with healthier substitutes)

Put on plate in order:
Baked Tortilla Chips
Brown Rice or Spanish Rice
Taco Beans, heated
Shredded Lettuce (romaine hearts) and/or sprouts
Tomatoes, chopped
Guacamole/Avocadoes
Onions (green, red, or sweet), chopped
Cilantro, chopped
Black Olives, sliced
Fresh roasted green chiles
Salsa or Ranch Dressing or Pico de Gallo
Coconut & pecans
