Potluck Next Weekend

We’ll be visiting friends next weekend and having a potluck of sorts. The other mom and I are contributing fixings for rice bowls. I often serve rice bowls when we have company at our house, but this will be the first time we take it on the road. I suggested it for the meal plan because I know how easy and satisfying a meal this is!

“Our” rice bowls consist of these layered up ingredients: brown rice, beans (mashed up and seasoned), a meat (seasoned shredded chicken or seasoned ground beef), and toppings (tomatoes, onions, cheese, cilantro, olives).

Our family will bring beef and beans, and the toppings of onions, cilantro and goat cheese. The other family will make the rice and the chicken, and prepare the toppings of cow cheese, tomatoes and olives. We’ll each contribute a dessert.

Should be a good meal!

    Meal 7= Mexican Pile On
    (When we lived in New Mexico, before moving to Texas, Mexican Pile On was very popular at church gatherings. Great for functions and meetings as everyone is assigned an item to bring. This is my healthy version. The real version also includes an all meat chili, a meat/bean chili, cheese, sour cream, white rice, fried tortillas chips and Fritos. I replace these with healthier substitutes)

    Put on plate in order:
    Baked Tortilla Chips
    Brown Rice or Spanish Rice
    Taco Beans, heated
    Shredded Lettuce (romaine hearts) and/or sprouts
    Tomatoes, chopped
    Guacamole/Avocadoes
    Onions (green, red, or sweet), chopped
    Cilantro, chopped
    Black Olives, sliced
    Fresh roasted green chiles
    Salsa or Ranch Dressing or Pico de Gallo
    Coconut & pecans

    My friends and I do a lot of salads and whole grains and soups. The salads are full of nuts and goat cheese or feta with berries and spinach with a healthy oil and vinegar. The whole grains are couscous or quinoa with veggies cooked in. Everyone makes something different. If it’s a small gathering, someone will broil some fish. Soups include tomato basil and lentil. We make the bachelors bring the wine and cupcakes.
