We love leftover cooked quinoa. It is ideal in all sorts of skillet dishes. Our favorite is the most simple: I will soften diced onions in extra virgin olive oil (or unrefined coconut oil or red palm oil) in a cast iron skillet, then incorporate the leftover quinoa. Once it is all warm, I season the dish with salt, pepper, and dried herbs. How do you use leftover quinoa?

Take the guesswork out of what to fix, what to buy and what to prepare. This week:

We love quinoa and cook it about once a week. Generally I just saute a little garlic and then add the quinoa and a little water and let it steam the first time. Then we use it for taboulleh or as a base for various other cold salads (tossed with steamed beans, tomatoes and basil, etc). Basically we use it for salads, I guess. I like it plain with a little salt and pepper too!
Yummy ideas, Terri! I love quinoa in tabouleh!
I like it sprinkled over any green salad. Although I certainly don’t make quinoa enough!
Oh, yumm! I will try that!
I like it in the morning with a little Kala Namak (Indian black salt) and olive oil, it’s just like scrambled eggs.
I also will toss in a sauteed onion, some mushrooms, cumin, garlic and a can of tomatoes and green chillies and sprinkle the whole thing with cheese. It’s like a Mexican style frittata.
Yumm! Thanks for sharing that, Michael!
