Transferring bar cookies to freezer bags one at a time not only takes time, but it isn’t that easy to get the cookies arranged well in the bag, without spilling crumbs all over the place.
Here’s the way to get square pans of cookies into the freezer bags — easily, quickly, and cleanly. When I make four 8″ square pans of cookies at a time, this really helps me out!
1) Lay a sheet of Natural Waxed Paper over the cookie pan. It should be long enough to wrap completely around the cookies.
2) While holding the pan with one hand, place the other hand on top of the wax paper and cookies. Flip it all over quickly (yet carefully). Lift the pan off the cookies carefully.
3) Wrap the paper around the cookies, like a package. Hold the freezer bag open with one hand. Hold the folded edges of the paper down with the other hand while you gently nudge the whole package of cookies into the bag. Slide it in all the way and close the zipper.
4) Repeat for any additional pans of cookies. Freeze. Both the wax paper and the freezer bags can be used over and over again. Eventually, the wax paper can be retired to the compost.
