Here’s the first Weekly Kitchen Tip at gnowfglins.com. I am looking forward to receiving and sharing your tips in the future. I will use one of my own to kick-start this series.
I’m a weakling. When the kids got big enough that I no longer carried any of them around on my hip, my arms didn’t receive daily strength-training. When I make a double-batch of bar cookies (for instance, Sprouted Whole Grain Tollhouse Cookies), filling up (4) 8″ square pans and pressing the dough down with a spatula totally kills my arms. Yes, I am definitely a weakling.
So now what I do is:
1) Divvy up the dough among the prepared baking pans.
2) Cut off a sheet of Natural Waxed Paper, enough to cover over one pan with a little overhang. Lay it over the first baking pan.
3) Press the cookie dough into the pan, using the wax paper as a barrier from getting my hands all dirty (or worn out). Be sure to get into those corners! Repeat for any other pans.
4) That Natural Waxed Paper can be wiped clean and dried for reuse. When it has no more life left, it makes great compost.

I guess I am more of a weakling than you! I lay a piece of waxed paper down over the dough and then use a can of food to press and roll bar cookies out to fill the pan.

Well, that’s a good idea! I could save myself even more arm strain!
Then what do you do about the corners? Go back and smooth them out with fingers?

Yes I smooth down the corners with my fingers. It works well for me!
