Weekend Foods & Treats

The yummiest part of the weekend was making a gluten-free version of Halawa-Halawi. It was so simple I wonder why I didn’t do it before: substitute buckwheat flour for the whole wheat flour. That’s it! (Use the buckwheat flour from de-hulled buckwheat.)

I made the date version of my vanilla-coconut ice cream again. The dates make the ice cream deliciously creamy. This is matter of pureeing a bunch (like 24) dates with three cans of coconut in the Vita-Mix, without using any other sweetener (do add vanilla). The ice cream filling, when chilling before freezing, solidifies, but that’s okay. It is also susceptible to freezing quite hard after a few hours. The best time to eat it is right when it comes out of the ice cream maker or within 2 hours of putting it in the freezer.

Our main dishes were pretty much all the same. On Friday evening, I browned four pounds of grass-fed ground beef. I added tomato paste, diced tomatoes, eight cups of black beans, salt, pepper and loads of coarsely chopped fresh basil. This we ate on Saturday ladled on top of smashed red potatoes. Yumm! Then on Sunday, we ate it with warm brown rice. It just doesn’t get old. (Thank goodness, because there’s still more to eat today.)

  1. Ran across your site this weekend and have been loving it. This recipe sounds good…especially served over potatoes. Thanks for sharing! My father raises natural grass feed beef, so of course that is all my family eats! Good stuff.
