The solution to freezer storage of freshly-milled flours hit me like a ten pound bag of flour.
Five and ten pound bags of most grains and beans from Azure Standard come in double- or triple-walled paper bags. Why not reuse the bags to store flour?
When milling flour in my Vita-Mix dry container, I grind 4 or 5 times the amount of flour needed at that moment, and then freeze the rest for use throughout the week. From here on out, I’m freezing the extra flour in a recycled paper bag instead of a zipper-seal storage bag. A paper lunch sack (doubled or tripled up) works, too.
Other food items can be stored this way: ground nuts or nut flour, whole nuts, whole seeds, fried fruit. The main caution is that these foods will be more susceptible to freezer burn, so plan on using this method for short-term freezer storage.
