What’s Cookin’

We had guests over on Saturday. The husband/dad of their family was helping us plan an addition to our shop/pole barn. The meals turned out so easy because of all the prep cooking I did on Thursday and Friday.

On Thursday, I cooked two chickens in the crockpot and a quick soak/cook of a full pot of black beans.

On Friday, I processed very ripe pears to end up with 6 quarts of raw pear sauce. I put 5 of the quarts in the freezer and saved 1 quart.

On Saturday morning, I used the pear sauce to make Ginger Pear Muffins. I made a batch of Gluten-Free Tortillas. Our friends brought the Whole Wheat Tortillas for the non-gluten-free eaters. I cooked another pot of beans, the a quick soak/cook method, and they turned into refried beans. I deboned the chickens and warmed up some of the meat with salt, pepper, nutritional yeast and a bit of water to make Seasoned Shredded Chicken (minus the cumin, as I’m out). My friend grated goat cheese and diced heirloom tomatoes from the Farmer’s Market. This all went together to make some awesome burritos!

The muffins we enjoyed for snacks, along with pears and apples.

I made an experiment too, but just for us and not for company, was to make date-sweetened ice cream using pureed whole dates with coconut milk and vanilla extract. It was delicious! And not only delicious, but it turned out to be the creamiest non-dairy ice cream we’ve ever enjoyed. I have a little tweaking to do on the recipe before I share it.

    Have you ever cooked in a solar oven? There are instructions on the internet on how to make your own. I am asking my husband to make one for me for Christmas.
