We ate stuffed grape leaves, quinoa tabouli, and Arabic meatballs again this weekend, serving them to Jeff’s folks. We just never get enough of that food! With the kids gone, there is only Jeff and me to share all the leftovers. I just enjoyed a nice bowl of tabouli for my lunch.
My challenge these next two weeks will be how to cook for only two. I’m used to cooking one day and the five us eating off that for two days. I think Jeff and I would get a little bored with that scenario, because the same quantity of food would likely have us eating the same food for 4 or 5 days!
Another challenge I have is adjusting how many microgreens and sprouts I have going. The good thing is the goats will eat whatever we can’t. But… that’s not a great solution. So I will cut back on those and hopefully achieve a good balance.
With the kids gone, I have more chores to do. It is now my job to rinse the sprouts morning and night (usually the girls’ job) and to feed the goats their oats mixed with garlic (for a virus they have). Jeff will help me with the feeding, thankfully. It is hard to do it when we’re not set up with feeding stations. Imagine trying to hold a bowl to feed one goat with the other seven climbing all over you at the same time.
