Gift of Lettuces and Parsley

Our friends who came to see us this weekend have a great garden. This year, they received tons of volunteer lettuces, more than they can handle. If only I could be so blessed! They brought us 7 big shopping bags full of lettuce and another 2 full of parsley. What a wonderful gift! I washed half of it while they were here on Saturday and then finished up Monday morning with double-washing it and spinning it dry. Now the fridge is stocked for at least a good week with clean and prepped lettuce — three varieties, one of which is butter lettuce. The second variety appears to be red lettuce; I don’t know what the third variety is.

to double-wash and rinse the abundance of lettuce we received from our friends’ garden.

Then there was the parsley… oh, I love parsley! I dream of growing lots and lots
of it myself, at least by next spring! After I had picked off the tops,
there still was so much it filled a huge stainless steel bowl.

Quinoa Tabooli
On Monday, I made a huge bowl of Quinoa Tabouli with the parsley.
We wish there was still more — it was so good to eat.
Tabouli is very nutritious, and when the weather is hot, nothing
beats it for being cool and flavorful.

  2. Yes, Robin, I leap for joy at things like this, too. We are still, a week later, enjoying the lettuce from our friends. It is almost gone now, though. Then we’ll be back to just sprouts. I’ve been so busy with helping Jeff with fencing or caring for company that I haven’t been able to start my trays of microgreens. Hopefully this week, I can start those so we can have some sort of greens of our own.

    How is your gardening going? You are an inspiration with the hard work and dedication you are putting into it. I’m sure your girlies enjoy the process very much, too!
