My batch of vanilla-coconut ice cream last night turned out horribly. Yuck! First of all, it was too hot to freeze well. Second of all, I purchased a type of coconut milk where you start with coconut cream and mix it with hot water. The resulting coconut milk was not smooth, it was chunky. So the texture of the ice cream was fuzzy and had many bits of coconut in it. I won’t do that again.
My other adjustment is that last night, I put chickens in one crockpot and pinto beans in another crockpot — all to cook over night. The chicken cooked no problem, because I plugged in that crockpot! Forgot to plug in the other. So the beans are just now starting to cook. They’ll be done for dinner, though and that’s when I need them. So that will be okay.
Everything will be okay. God is good!
