Recent Meals

I have to admit that I haven’t felt much like cooking lately, although I still have been performing my duties. I know it has to do with Jeff having worked much overtime the last two weeks. With him not here, the kids and I might as well subsist on popcorn and fruit. :D Thankfully, God blesses my efforts anyway, even if my heart isn’t in the effort like it should be.

Yesterday, I made a pot of Mujederah (Arabic lentil and rice stew). I wanted to revisit the recipe since a couple of people commented that the recipe yielded a watery stew. They were right. I’m not sure what I was thinking when I wrote the proportions the first time. Sorry! I’m about to amend the recipe so it makes a nice thick, stew. With our snowy weather (in April!?) the meals really warmed me. I felt satisfied and I think the family did, too.

I also made a first attempt at some cinnamon-raisin gluten-free cookies. Need to experiment a bit more before I share a recipe. Other foods we enjoyed over the weekend were: chocolate ice cream and wild salmon salad.
