Very cool, how was it? I am trialing out a new quinoa product, so I will be making a similar type pizza crust this week – http://www.godairyfree.org/Recipes/Bread/Quinoa-Flax-Flatbread-Vegan-Gluten-Free-Nut-Free-Soy-Free.html – but your flavor additions sound like a good idea too. I might do this. I wonder if some oil would help as well. Thanks for the ideas!

That looks like a good recipe! I was thinking a couple days ago that little personal size crusts could be made with batter, pancake style.

Regarding the oil, I don’t actually think it is that necessary, since flax seed meal is oily itself. I would try it without first and see how you like it.

We did like the crust I shared here. I made them twice. The first day, there was a delay of a couple hours between baking it and topping it. The next day, I topped it right after baking, and it seemed soggy. So, there appears to be a benefit to making it and letting it “set”.
