(Variation) Nutty Minty Carob Fudge Balls

When we recently tested our food allergies, I discovered that I am allergic to sesame seeds, and therefore, tahini. I challenged myself by consuming tahini recently and discovered that I experience uncomfortable symptoms when I eat them — so I am definitely allergic. That’s a bummer, considering my Middle Eastern heritage and my love for sesame seeds in many different foods.

One of our favorite summer treats, Nutty Minty Carob Fudge Balls, contain tahini (and lots of it). I haven’t been able to eat these, until today. Naomi helped me make them today. We subbed coarse ground cashews for the hazelnuts and almond butter for the sesame tahini. The hazelnuts didn’t need a substitution, except for the fact that I don’t have any hazelnuts at the moment. So let this be a lesson for all of us that ground nuts are usually interchangeable.

The resulting treat … awesome! We’ll have them for dessert tonight and for snacks tomorrow when we’re out.
