Cold Cut Dinner
As I mentioned in Healthy & Cool Summer Meal Ideas a cold dinner can be every bit as delicious as a warm meal. In the summer, it is infinitely better because one isn’t left feeling stuffed and hot. Here’s a cold dinner Jeff and I shared this weekend.

Jeff’s dinner
~ green slaw, smoked wild salmon salad and organic corn tortilla chips ~

My dinner
~ green slaw, cold quinoa salad, and smoked wild salmon salad ~

Looks good Wardeh. I printed your green slaw last week and wanted to make it tonight. I noticed your put Kale in your slaw. I thought you had to cook Kale? I have a whole bag of it and it says, “ready to cook”.
Did you make your green slaw in your new food processor?
Dice it up or shred it finely.
Well… if you want cooked kale, you do cook it. For this salad, you want it raw.
I am using my fp to do the slaws. Oh, man, it is helping me so much. I’m so thankful!

Hey Wardeh, I made the green slaw last night. I used spinach, romain, kale, cabbage, carrot, radish, green onions, uh… I think that may have been it. LOL I totally forgot to put in walnuts. duh. I also made the vinaigrette dressing and I liked it a lot. William didn’t,he doesn’t care for dill. He really liked the slaw and called it mulch, so I am pretty sure we will be having mulch from now on, instead of slaw. LOL
I called my MIL and asked about the kale, she also thought you had to cook it. She incouraged me to try it, since she wants to try it too. LOL
I have passed on your recipe section to her.

Thanks for the recipes.
Sorry for the long comment.
Michelle, you’re hilarious. Mulch sounds good. If he didn’t like the dill, try another herb or blend of herbs that he likes. Everything else can stay the same. Thanks for the good report and the details. I enjoy details. ~Wardeh
This looks so good and is making me hungry!
