Tahini Sauce (for Falafel Sandwiches)

TAHINI SAUCE (for Falafel sandwiches)
Recipe by Martha Bisharat, Wardeh’s mom

  • 1/2 cup sesame tahini
  • 1/2 cup lemon juice
  • 1/2 cup filtered water (or more if needed)
  • handful of parsley, chopped

Cream tahini and lemon juice together. The lemon will thicken the tahini. Add water to thin the sauce until it has a creamy, spoonable consistency. A handful of chopped parsley added to the sauce gives it an interesting texture and delicious taste. Sauce may be prepared ahead of time.

Hi, Wardeh! Wonderful things are going on at your house!! I have a question: my tahini sits in my fridge for a long, long time–any suggestions to re-incorporate, or is it hopeless?

  2. Wardeh says:

    Gina,

I know — it is really hard to stir when it has separated. You can put the whole jar in a hot water bath, which may make it easier to reincorporate.

I don’t think you need to toss it, though. However, sesame seed oil is a really fragile oil, so keeping it in the fridge is a must if you don’t want it to go rancid.

Hello, Anna! Yes, it has been a long time since we’ve seen each other. How fun for you three to be in high school together. What is your best class? All my siblings are great. We’re all spread out. Amal is in CA, Jibran is in WA, and Jenan is in OR. I’m around the Pacific Northwest, too. But I don’t see them much because we’re not big travelers. I miss them. Good to hear from you! God bless you and your sisters. And please tell your sweet mom how much I miss her, too. She’s special.
