All About Lentils

We love lentils. I cook with them freqently — a couple times a week. They’re such an easy legume to include in meals because they don’t require soaking and they cook fast. They’re high in iron, protein and fiber and very low fat.

    Thanks for this post. We are learning to really enjoy lentils, so I’m glad for the nutrition facts as well as more ideas on how to use them. On a regular basis, we eat lentil & rice casserole, a lentil,brown rice and veggie salad and just yesterday I made a lentil soup for lunch. It was delicious and the house still smells sooo good!
