Whole Wheat Zucchini Bread

Makes 2 loaves

  • 1/4 cup flax seed meal
  • 3/4 cup water
  • 4 cups zucchini, cut in chunks
  • 1/2 cup grapeseed oil
  • 1 cup agave syrup
  • 2 teaspoons vanilla
  • 2-1/2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon allspice
  • 1 cup chopped walnuts
  • 1 cup raisins

Whisk flax seed meal and water together in Vita-Mix or blender. Add zucchini, grapeseed oil, agave and vanilla. Turn on Vita-Mix to speed #4 and process about 20 seconds, until zucchini is chopped.

Combine all dry ingredients in large bowl and fluff with fork. Pour in wet ingredients and stir until just combined. Add walnuts and raisins and stir until just combined.

Spoon batter into two greased loaf pans. Bake at 375 degrees for 45 to 50 minutes, or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes, then transfer to cooling rack. Store loaves in airtight containers or wrap securely in foil. Freeze if not consuming right away.

Muffin Variation (shared by Robin): Spoon batter into greased muffin pan and bake for about 30 minutes.

  2. Hi, Carol. Agave is a natural sweetener, alot like honey, but with a milder flavor.

  3. Ooooo, that looks yummy. I have zucchini, but I was saving that to make dried chips. I might have to change my mind. LOL Can I sub grapeseed oil for something else? I don’t have that.

  4. Hi, Michelle. You can sub the cooking oil you normally use. :) I like grapeseed oil because it is poly unsaturated and it has a low smoke point.

  6. Hiya Dear Wardeh! :mrgreen: This should give you an idea of how motivated I am today. I just read this recipe, realized that we have all of the ingredients and the girls and I are going to make it right NOW. :lol:
    I will take pics, too. I am going to make one loaf and some muffins since we have one loaf pan. I will let you know the cooking time on the muffins when we are finished.
