Creamy Black Bean Chili
My other name for this chili is “Change of Pace Chili” because that’s what it is — a little different from the usual fare, but very chili-like.
- 2 pounds grass-fed ground beef
- 1 onion, diced
- 1 14-ounce can light coconut milk
- 2 cups beef broth
- 1 28-ounce can diced tomatoes
- 4 cups cooked black beans
- 2 teaspoons sea salt
- 1/4 teaspoon black pepper
- 2 teaspoons cumin
- 1 teaspoon paprika
- 1/8 teaspoon cayenne pepper
In a 4 quart stock pot, brown ground beef over medium heat. Drain excess grease. Add onions and saute until translucent. Add all other ingredients. Cover and simmer for 20 to 30 minutes to let flavors mingle.
Optional: Serve over brown rice or quinoa with shredded cheese, diced tomatoes, diced onions, diced avocados, or sliced olives.

Does the coconut milk strongly flavor the chili? I think it sounds delicious whether it does or not, just wondering
I don’t think it is strongly flavored, but the flavor does change. It is a little creamier and sweeter, but really pleasant. I don’t know how else to describe it. Coconut milk is a really nice addition to alot of dishes.
Oh my that sounds good! I have everything but the beef and beef broth. We are completely out of meet, except for some canned salmon, tunafish and chicken that we use for egg sandwiches.
I am still waling each evening wtih my sweet girls.

I have been walking but not as much because I come back and suffer with allergies for several hours after venturing outside. The tea works, but not that well…
Oh, well. I hear the allergy season around here ends in July. At least the grasses and flowering trees. That is just a few weeks away.
