French Bread

Back when I first tried baking herbed French bread, Sylvia commented:

“I don’t add the herbs to the dough. I gently flatten the dough after the first rise and then sprinkle it with the herbs and coarse salt and pepper. Then I roll it up tightly and allow it to rise again. After baking, it has a swirl of herbs inside the loaf! Sometimes the swirls separate, but with practice you can get the swirls to all stay together for a lovely loaf.”

I gave this a try last night. Besides being fun to make, this bread is so delicious! The coarse salt does make all the difference. I made two loaves. One loaf shows prominent swirls and the other loaf’s swirls aren’t apparent when sliced.

This is the loaf that shows off its pretty swirls. It did separate a little at the outside edge, but the swirls didn’t come apart on the inside of the loaf.

  1. Wardeh its so pretty! Good job! :) I’m glad it didn’t separate too much, mine did sometimes.
    Did you use kosher or coarse salt in your bread? I was surprized at the difference it made when I used it. Maybe just my tastebuds?
    What herbs did you use?
    Well, it turned out so nice. I wish I could taste it :lol:

  2. Thank you, Sylvia! I used coarse celtic sea salt and the herbs were thyme, basil, parsley and dill. Next time, I want to do the onion and dill you mentioned along with salt and pepper. I wish you could taste it, too. :)

  3. Sounds yummy….. once I made some using almost every herb I had in the cupboard. I use summer savory and oregano, thyme and rosemary. Boy was it good. :)
